Today, I'm excited to share with you an energy balls recipe that is not only easy to make but also packed with wholesome ingredients to keep you energised throughout the day. Whether you need a quick pre-workout boost or a healthy afternoon treat, these energy balls have got you covered!


Ingredients:


  • 400g almonds, cashews and walnuts,

  • 400g medjool dates,

  • A couple of drops of vanilla extract,

  • 2 tablespoons of coconut oil.

Instructions:


  • In a food processor, blend the nuts first for around 1-2 minutes until they form a fine, flour-like texture.

  • After this, add the dates and vanilla extract to the blended nuts until fully blended together with the nuts. This will usually take around 2 minutes.

  • Then add the coconut oil to the mixture and blend further. This will bind the ingredients together.

  • Roll the mixture into small balls using your hands and either roll each ball in desiccated coconut or cover in melted dark chocolate and sprinkle with a coconut garnish!

  • Store the energy balls in an airtight container in the refrigerator. They will keep for up to a week. They are also great to freeze and you can take one out of the freezer every time you fancy a chocolate hit!

Plus, they are customisable - feel free to add your favourite ingredients like dried fruits, nuts, or seeds to make them your own!
